I know for Polycom only signaling traffic is sent to their CMA and that the payload is point to point, is this the case for the VCS or does all the traffic go to the VCS?

Yes and No :)
It all depends on what you want to do.
When a VCS-Control is acting as a gatekeeper and handles calls between local registered endpoints, the MEDIA is not routed trough the VCS-Control.
However when traversing a firewall, when the VCS-Control works together with a VCS-Express, then the calls will ROUTE trough the VCS-Control, SIGNALLING and MEDIA.

So now I'm being told two diffrent things. My Tandberg rep tells me ALL traffic is routed through the gatekeeper and here I'm told only traversal and I'd assume SIP\H323 or IPv4\IPv6 trancoded traffic is routed through the VCS-C.
Anyone have this published any where one way or the other?

Signaling always goes through the VCS.
For H.460.18/19 firewall traversal, media (video and audio) will go between the client/server. This means between a VCS-Control and VCS-Express and/or between VCS-Express and H.460.18/19 enabled devices.
For SIP to H.323 interworking, media also flows through the VCS.
And for IPv4 and IPv6 interworking, media also flows through the VCS.

Sean,
what about a call between a sip endpoint and a 323 endpoint. I think you (Tandberg) call it internetworking.
Do you mind if I shoot you an email so I can fill you in on some more details, I think you might be able to help me out on this.

Yes you are correct. Media flows through the VCS for these reasons:
1. SIP to H.323 conversion
2. IPv6 to IPv4
3. Firewall traversal
I read my previous post and it is not very clear. What was I thinking :) ? I edited the post to be more clear.

Sean, you're my hero. Thanks for getting me that PM to me, it'll be huge for us.
